These look delicious! I tried the Edna Lewis recipe the first time and it went terribly wrong-- maybe a misprint? But after many tries I found the best recipe and it's quite similar to yours. I use 2 T. butter and 2 T. butter flavored Crisco. Also try adding a spoonful of sugar, it seems to help the texture. Another tip-- bake them in a roasting pan, they seem to rise more!
